Stuart Thompson (Untied, Uncle Mings) has been given a tough assignment at new bar Jackalberry.
He’s expected to be equal parts bar manager and travel agent.
Jackalberry, which launches May 30 in a heritage site at 161 Sussex Street, is aiming to scratch the itch of thirsty travel bugs.
The “exploration theme” starts with an interior of Amazonian-style greenery and velvet booths styled by Belinda Cendron, who previously worked on Baxter Inn and Shady Pines.
“Jackalberry is inspired by the age of exploration, there will be something new and unique to discover on each visit,” Thompson says.
We have worked hard to design a cocktail menu that will transport guests to Tanzania one evening, and Italy the next through experimentation of flavours and presentation.”
