A festive take on the classic muffic.
250g plain flour
2 tsp baking powder
1/2 tsp salt
100g glace cherries
50g chopped dates
1 free-range egg, beaten
150g caster sugar
60g melted butter
- Lightly brush a muffin tray (12 moulds) with oil and dust with flour, tipping out the excess. Preheat the oven to 180C.
- Sift the flour, baking powder and salt into a large bowl. Stir through the dried fruits.
- In another bowl, mix together the remaining ingredients, then gradually fold into the dry ingredients using a spatula. (Do not over-mix or the muffins will be heavy.)
- Spoon into the muffin moulds and bake for 12-15 minutes, or until golden brown.
